This work is based on a survey of 126 Bengali-American households, an ethnography of 3 households, a perusal of the ethnic press, and a study of diasporic fiction. Pre-immigration data is cited from a 1970 study of 2386 Calcuttan households.

This work is about the food practices of Bengali-American professionals in their suburban homes. What are the dietary changes wrought by immigration? How different are these transformations from those of Jewish and Italian migrants at the turn of the last century? How does food relate the native to the migrant, the ethnic to the universal, and the modern to the traditional? These are the questions that animate this work. My attempt is to show how cuisine speaks to migrant experiences and explain the significance of transformations of taste.

Central to modernity is the problem of place---the issue of belonging, and the reflexive crafting of the self in relation to both place and rank. Food is one of the mechanisms through which we attempt to hang on to a sense of place. Home becomes problematic with modernity and food is central to keeping our homes unsullied. That is why immigrants crave distinctive products of their homeland and that is why we burden the term "homecooking" with so much symbolic weight.

"Home" for the migrant is a complex place. They hope to build their homes anew, often accentuating traditional patterns, while also fantasizing about abandoning the old locale and partaking of the products of the larger world. Much of that contrariness is reflected in the food choices of migrants. Breakfast is a reenactment of cosmopolitan syncretism, and dinner a cliche of ethnic identity. Refusing to choose either of these options in full, the American Bengali emerges as an increasingly heterogeneous subject. "Traditional" dinners and non-traditional breakfasts are acts on a gastronomic stage on which the American Bengali reenacts larger concerns about ethnicity, patriarchy, and modernity.
