This dissertation examines food practices as a cultural manifestation of Jewish nationalism within the Zionist movement and in the state of Israel from the First Aliya (immigration) in 1905 to the Six Day War in 1967. The Zionist movement and later the Israeli state tried to integrate immigrants from numerous countries of origin into a unified nation by using food, among other cultural practices, as an instrument of acculturation and propaganda. Through an analysis of institutional, domestic, and professional kitchens, cookbooks, advertisements, and media, I show the role of food in creating a coherent national culture in a very short period of time. I argue that food, despite its apparent marginal place, was instrumental in Jewish nation-making and that as such it reflects the dynamic relationship between the national movement and the state and the multitude of ethnic, ideological, and political factions that constitutes it.

520 $a A study of food allows a window into the role played by a variety of groups, such as women, normally marginalized in the formal narrative of the nation. By examining food habits I offer a more inclusive narrative and thus a more complete picture of Israeli society. By playing a role in both the private and the public sphere a study of food bridges the two and shows how they influence each other. Changing attitudes toward Kashruth illuminate the distinction between Jewish and Israeli nationalism. The adoption and adaptation of local Arab food products and dishes offers a window into the complex relationship between the two nations. The changes in food habits reflect the transformations in society and their effect on the individuals who makeup the nation. This work will tell a history of Jewish nationalism through food practices in an attempt to achieve a better understanding of nationalism in general, Jewish nationalism in particular, and the forces that shape Israeli society today.
