This research involved the development of a Food Craving Scale (FCS) and studies to test its psychometric properties and examine norms in 3 populations. In study 1, an item pool was generated from the current research on food craving and from measures of substance craving and affective states. Four hundred thirty-eight subjects completed the scale. In study 2, a principal components factor analysis was done on the 43-item pool using 284 subjects. Internal validity, test-retest reliability, and construct validity were examined. Items were reduced to 31-item scale consisting of 4 factors: Negative Emotion (α = .95) Positive Emotion (α = .88), Hunger and Food Cues (α = .80), and Beliefs (α = .80). Test-retest reliability was adequate for all four subscales over a 3-month period. Construct validity was shown by positive and significant correlations of the FCS subscales with related measures of eating and bulimia. Studies 3 and 4 examined norms for the scale in an adult female (<italic>n</italic> = 162) and dieting female (<italic> n</italic> = 62) population respectively. The FCS may be useful for research and clinical practice.
