Food waste has become a global problem that requires a comprehensive solution involving multiple stakeholders. One promising approach, particularly for the food and agriculture industry, is value addition. Value-added processing is known to prevent a significant portion of food loss and aligns closely with the Circular Economy (CE) model. It addresses various economic, environmental, and technical challenges, contributing to solutions for the food waste problem. This research focuses on the value addition of agricultural products and techno-economic assessments (TEAs) to evaluate the economic feasibility of value-added applications in the food and agriculture industry. Given the versatility of extrusion technology, it is crucial to understand its impact on enhancing the value of sustainable agricultural products. This work highlights key feed and process parameters that enhance the functionality and physicochemical properties of extruded products.Secondly, to understand the feasibility of value addition, a TEA study was conducted using the process simulation software, SuperPro Designer. This study investigated the technology and cost-effectiveness of extracting zein protein from corn gluten meal (CGM), a by-product of corn ethanol production, at different production scales for poultry feed applications. The TEA results suggest the economic potential of utilizing CGM for value-added applications in the feed industry, with a gross margin of 6.71 to 17.2 from small to larger scales, indicating that profitability improves with increased production, demonstrating economies of scale.Similarly, the third study applies SuperPro Designer to assess the technical and economic feasibility of extracting levodopa (L-DOPA) from various bean sources as an alternative to antibiotics in the poultry industry. The analysis evaluates different unit operations, such as spray drying and distillation columns, as well as velvet and fava bean varieties across different production scales. The results indicate that only Model 1, which utilizes velvet beans with a distillation column, achieves significant cost reductions and profitability at larger scales, supporting the potential for L-DOPA commercialization using this model. The final study shifts focus to kernza, a perennial grain with several environmental benefits. This study evaluates the extrudability and physicochemical properties of kernza at different screw speeds to produce kernza-based textured vegetable protein (TVP). Results indicate that lower screw speeds during extrusion lead to decreased water activity, water absorption index, bulk density, and true density, likely due to the intrinsic heat generated during extrusion.Collectively, these studies offer a comprehensive analysis of value-added processing, bridging technological advancements with economic evaluations. The findings provide valuable insights into the sustainable utilization of agricultural products, contributing to the development of economically viable and environmentally responsible solutions in the food and agricultural industries.
