The leaves of roselle hibiscus (Hibiscus sabdariffa L.) have been consumed as leafy greens by a diverse group of population, but research on their pharmaceutical values has been limited. This dissertation evaluated the nutrition and bioactivities of roselle leaves under organic production system to be used as a health supplement with calyces. Repeated experiments were conducted to evaluate the effects of organic 8-5-5 (N-P-K, specify the true formula of N-P-K) fertilizer treatments. The treatments were: T1 (Control), T2 (1X application); T3 (2X applications, and T4(3X applications) at the application rate of 9 lbs. of 8-5-5/100 feet. The treatments were applied once at planting (May 23, 2019) as incorporated, at planting + one surface application one month after the first, and at planting + two subsequent surface applications at one month interval. ARCOS ICPA method and LECO Truspec CN analyses were used to analyze nutrient elements, SPAD meter was used to measure chlorophyll content of the leaves, Folin Ciacalteu's assay and ABTS-1assay were used to measure total phenol and antioxidant contents, respectively. LC/VIS/MS and HPLC-QTOF-MS were used for quantitative and qualitative analyses of major antioxidant compounds. Variations and inconsistency in the nutrient elemental contents of the leaves in response to fertilizer treatments were observed among five roselle accessions. Jamaica accession exhibited significant increase in P and S at T2 and T3 and decrease in Ca at T2 and Mg at T4 as a result of fertilizer treatments. Thai Red exhibited significant increase in S at T2 and T3 and decrease in Ca by all fertilizer treatments and Mg at T3 and T4. Florida Ted exhibited significant increase in S at T2 and T3 and Mn at T3 and T4 and decrease in Mg at T3 and T4. Malaysia Sim exhibited significant decrease in N by all fertilizer treatments and Mg at T3 and T4. Malaysia Giant exhibited significant decrease in P and S at T3, increase in Fe and Mn at T2, T3 and T4. Uniquely, when compared with other accessions, only Malaysia Sim exhibited significant reduction in N by all fertilizer treatments. Organic fertilizer applications decreased Mg by all fertilizer treatments for all accessions, but increased K by all fertilizer treatments and S contents particularly by T2 andT3 of the leaves of all accessions. Furthermore, organic fertilizer applications had enhancing effect on micro-nutrient elements of Fe at T2 and T3 for Jamaica, Thai Red, Florida Ted and Malaysia Giant and Zn at T2 and T3 for Jamaica, Thai Red. Organic fertilizer treatments increased plant height, chlorophyll content and fruit yields significantly for all accessions. It was noted the decreased plant height in Florida Ted in 2019 was not a true height reduction but due to the heavy load of fruits that caused the drooping of the branches. Fertilizer treatments induced variation in total phenol and antioxidant contents of the leaves among accessions but did not cause significant effects in the total phenol and antioxidant contents of the calyces among five accessions. Fertilizer applications affected chlorogenic acid isomers, flavonoids and anthocyanins concentrations, which were varied with accessions. There appeared a trend that the amount of antioxidant is associated with the amount of total phenol of the leaves of Jamaica and Thai Red accessions. The research results provided science-based evidence pertaining to plant responses to applications of organic fertilizers for Roselle cultivation. The information may have implications in decision-making for the farmers to consider use of organic fertilizer 8-5-5 for value-added nutritional and economic production of roselle hibiscus.
