Agritourism -visiting a working farm for recreation or education- increases family farms' revenues and on-farm sales of agricultural products. Agritourism also generates on-farm jobs for family members, decreasing the need for off-farm employment. Initially framed as an income diversification strategy for farms, agritourism is now known to motivate the conservation of agricultural landscapes and their inherent cultural and environmental assets. The literature indicates agritourism may offer broader benefits to society such as educational gains, increasing agricultural literacy, and motivating engagement in local food systems among citizens. This is significant as large-scale agricultural industrialization distances the public from food production generating citizens who do not exercise their decision-making power over food systems. This lack of citizens' participation in food systems derives in an unfair distribution of benefits, environmental degradation, ultimately limiting citizens' access to healthy and nutritious food. Advancing local food systems (LFSs) empowers consumers and producers to adopt regionally appropriate agricultural practices, improves food security, and strengthens local economies. Through hands-on agricultural experiences and experiential learning, agritourism may strengthen LFSs by advancing citizens' education and engagement in LFSs, yet, these additional benefits remain largely unmeasured.This work fills the aforementioned gaps by developing an instrument to measure the impact of agritourism experiences on education and by measuring the influence of agritourism on LFSs engagement among agritourists. For agricultural educators and policymakers seeking to increase agricultural literacy, this dissertation offers a validated instrument to measure the effectiveness of agritourism experiences as well as the impact of agricultural education programs in informal contexts. Additionally, this dissertation reveals that agritourism is far more than an economic diversification strategy for family farms influencing society in many ways. Agritourism experiences motivate citizens' engagement in LFSs by increasing intentions to buy local food, intentions to pay more for local food, and advocate for local food. Thus, this dissertation offers practical applications to enhance the power of agritourism to promote LFSs engagement. Agritourism operators can increase LFSs engagement by expanding the opportunities for family participation and designing experiences to encourage exchange within and among families. These interventions may also foster visitor recruitment (e.g., word of mouth) to magnify the impact of agritourism and encourage the public to advocate for LFSs.Lastly, this work expands the notion that agritourism benefits mainly rural communities indicating that those benefits go beyond rural areas as they help educate the public and reconnect agricultural producers and consumers. Thus, placing agritourism at the heart of policies promoting LFSs by supporting investment, innovation, and educational offerings at farms will promote food systems sustainability. By broadening the paradigmatic study of the benefits that agritourism offers, this dissertation pioneers the investigation of innovative ways to advance LFSs and opens up potential venues to tackle wider societal issues, such as the lack of engagement of citizens in food systems decision-making.
