The purpose of this project was to create a nutrition education program for Vietnamese patients with cardiovascular disease based on current literature, which addresses the cardiovascular epidemic among minorities in the United States. Based on the principles of Social Cognitive Theory using Behavioral Therapeutic approaches, the program is equipped to encourage smoking cessation, healthy eating habits, and to improve physical activity patterns within the context of their culture. Developed using an active learning approach, discussions and activities were incorporated throughout the lectures to encourage patient learning, interest, and participation. Take-home assignments promote self-reflection and encourage autonomy in making lifestyle changes. Evaluation questionnaires were also included. An expert panel reviewed the curriculum and revisions were made based on their suggestions. The final curriculum was not field-tested. However, the program will be pilot tested in the future before use or distribution to facilities seeking to implement this program.
