The purpose of this project was to gain more information regarding the off-flavor in pond-raised catfish. Results showed that in five on- and five off-flavor catfish ponds, the microbial populations were less stable in off-flavor ponds. In this investigation the only organisms found to produce geosmin were the actinomycetes. Even though the blue-green algal, Oscillatoria was present in the off-flavor ponds, it did not produce geosmin. It was found that by growing actinomycetes on seven diverse media, geosmin was produced on all media, suggesting that geosmin is a constitutive by-product of actinomycete's growth.Subjects--Topical Terms:
