Student's satisfaction is an important factor in the participation success of the NSLP. This paper utilizes primary data collected from the Jackson Public School District during the Spring of 2000 by the National Food Service Management Institute. The data were analyzed to examine the effects six factors (food quality, staff, nutrition, diversity, time/cost, and dining ambiance) have on student satisfaction with food services in schools with optional and no-optional services. The major statistical procedure used in the study is analysis of variance (ANOVA). Previous studies have indicated that student satisfaction is related to participation the top three reasons for students not eating are time it takes to get the food, taste of the food, and not enough menu choices. The present study supports that students with optional services were more satisfied with the food, but ate lunch less often because of time allocated for lunch.
