Weather derivatives can be a useful financial tool to hedge the risks facing agricultural producers. Rather than insure against the consequences of bad weather such as lower crop yields, weather derivatives provide insurance against the bad weather directly. Weather derivatives are potentially very applicable for icewine makers who require the air temperature must be between -8 and -12 degree Celsius in order for grapes to be harvested for icewine production. The purpose of the study was to develop a model to price weather derivative for ice wine producers in Ontario and to assess the economic feasibility of offering such a weather derivative product.

Hourly weather data from 13 weather stations in the Niagara Peninsula were obtained from the Ontario Weather Network. There is a significant difference between the average harvest hours between location and between seasons. Premiums increase with the losses assumed on the grape yield through the winter season.
