Thesis (M.S.)--University of Puerto Rico, Mayaguez (Puerto Rico), 2006.
The production of fresh milk is one of the most important agricultural industries in Puerto Rico. Escherichia coli O157:H7, Listeria monocytogenes , and Salmonella spp. are foodborne pathogens that can be present in cattle and as consequence in the milk. The consumption of raw milk, inadequate pasteurization and/or contamination after processing are just several reasons that can cause considerable big outbreaks in the population. The objective of this study was to determine the large incidence of E. coli O157:H7, L. monocytogenes and, Salmonella spp. in raw milk storage in refrigerated tanks. In this study, 10% of all dairy herds industries in Puerto Rico (37 of them in total) were analyzed. The absence of E. coli O157:H7 and L. monocytogenes as well as the low incidence of Salmonella indicate that Good Agricultural Practices are being used in the dairy herds industries. It is necessary further studies to determine the causes by which Salmonella was the only one pathogen present in the milk storage in refrigerated tanks.
