This study investigated whether liberalized diets for nursing home residents improved dietary intake and nutrition quality of life. From a population of approximately 125 nursing home residents, 30 participants were chosen. Criteria for participation included age 65 or greater and following a sodium-, fat-, or concentrated sweets-restricted diet prior to the study. Diets were liberalized for 4 weeks. The Nutritional Quality of Life (NQOL) survey and intake studies were conducted before and after the diet liberalization. Results showed nutrition quality of life improved over 23.2% (p = 0.0001). Subjects' intake improved in all of the three areas measured. Calories consumed increased by 9.1% (p = 0.0002), protein by 9.9% (p = 0.0003) and fluids by 12% (p = 0.0216).
