Background: Obesity continues to contribute to the sequelae of chronic illness. Though diet is considered a major portion of disease prevention, many adults eat less than one vegetable per day. Improving diet and nutritional literacy has been linked to the improvement of self-care behaviors for disease prevention.Objective: The aim of this quality improvement project was to investigate ways to improve nutritional literacy in adults who are already engaged in physical fitness activities.Methods: Non-Randomized controlled trial was performed in the community setting with adults engaged in group fitness classes. The control group received written nutritional education provided by the United States Department of Health & Human Services Food & Drug Administration (FDA). The intervention group received website format nutritional education by the FDA. Nutritional literacy was measured via a validated tool, Nutritional Literacy Assessment Instrument (NLit), pre- and post- education. Statistical analysis of pre and posttest data was performed using regression analysis and chi-square to assess improvements.Results: On the Nutritional Literacy Assessment Instrument data, the regression analysis and chi-square did not show any significant improvements between the pre and posttest scores. Conclusions and Implications: Future studies should be considered with larger sample size and include different forms of education formats.
