Background: China is the largest country of origin for international students in the United States and worldwide. When studying abroad, students experience acculturation, which includes new diet and exercise patterns. Methods: This basic qualitative study relied on individual interviews with Chinese international students attending universities in an urban, Midwestern region of the United States. The semi-structured interview guide included questions related to changes in dietary and exercise patterns, accessibility of different foods, and attitudes towards food and exercise. Results: A total of 19 students from four different universities participated in the study. Six major themes were constructed: food choices based on the setting; altered intake of certain food groups; adapting to a new food environment; new and old social influences; food and exercise values; physiological changes. Discussion and conclusions: Diet and exercise played an important role in the acculturation of Chinese international students. The food environment/setting, social influences, and food and exercise values shaped the students' changes in diet and exercise patterns and sometimes resulted in physiological changes and altered intake of certain food groups. Universities can support international students by providing education and resources about adapting to a new food environment.
